ครั้งหนึ่งในชีวิต กับประสบการณ์ทานอาหาร จากเชฟ 3-star Michelin star Bruno Ménard ทริปฮานอยที่ผ่านมาเราได้มีโอกาสไปเปิดประสบการณ์รับประทานอาหารฝีมือเชฟ Bruno Ménard ที่ห้องอาหาร French Grill เนื่องจากช่วงที่เราไปนั้นเป็นช่วงที่เชฟได้รับเชิญมาที่ห้องอาหารนี้พอดี เราเพิ่งมารู้ตอนมาถึงที่โรงแรมแล้ว เลยไม่ได้เตรียมอะไรมาก่อน โชคดีว่าเหลืออีกเพียงแค่ 1 ที่พอดี เราเลยได้รับสิทธิ์นั้น

Guys, I’ve just had one of my greatest foodie experience ever in Hanoi! I noticed on my arrival at the hotel that chef Ménard was invited to the hotel’s restaurant. I, without a doubt, grabbed the chance heading to the restaurant to get the table. With the last seat left, the unprecedented food journey by the renown chef, Bruno Ménard turned out to be one of my favourite.

เชฟ Bruno Ménard เป็น celebrity chef ที่ประสบความสำเร็จและโด่งดังมากคนหนึ่ง การันตีได้จาก 3- Michelin star ที่เค้าได้รับ และได้รับเป็นหนึ่งในกรรมการของรายการ Masterchef Asia อีกด้วย ปัจจุบันเชฟเชื้อสายฝรั่งเศสผู้นี้ก็ได้ย้ายถิ่นฐานมาอยู่ในเอเชียมากว่า 20 ปี โดยเปิดบริษัทให้คำปรึกษาเกี่ยวกับอาหารอยู่ที่ประเทศสิงคโปร์ และหารู้ไม่ว่า กรุงเทพฯ เป็นที่แรกในทวีปเอเชียที่เค้าได้มาเยือน และได้ลองชิมแกงเผ็ดของไทย (เราเดาว่าน่าจะแกงเขียวหวานนะ) ซึ่งมันทั้งเผ็ดและอร่อยมาก จนทำให้เค้าถอนตัวจากอาหารเอเชียไม่ขึ้นจนถึงทุกวันนี้ ! และเมื่อเดือนมีนาคมที่ผ่านมา เชฟก็ได้รับเชิญมาที่โรงแรม Grand Hyatt ที่กรุงเทพฯอีกด้วย

Chef Ménard’s reputation might ring the bell to many foodies, but let me introduce him a bit here. He is a familiar face on television in a role of a judge in Masterchef Asia. This 3-michelin star chef has fallen in love with Asian cuisines until he decided to live in Asia for more than 20 years after tasting a spicy Thai curry during his first Asian trip to Bangkok.

ได้คุยกับ staff ของทางห้องอาหารว่าที่ต้องจำกัด seats ในแต่ละวันเนื่องจากเชฟเป็นคนพิถีพิถันในเรื่องของคุณภาพวัตถุดิบมากๆ เพื่อให้ได้คุณภาพที่ดีที่สุด ถ้าทำออกมาในปริมาณมากกลัวจะควบคุมไม่ได้ (เพื่อนๆเราจึงอด และส่งเราเข้าไปกิน บอกเราว่าไหนๆมาแล้วยูก็ควรต้องกินนะ ครั้งหนึ่งในชีวิต)

What makes him stand out is that he pays attention to detail especially on the quality of the ingredients used in his recipes. In addition, only a few seats are available for the lucky guesses to ensure that everyone gets the finest food.

โดยเชฟมาประจำที่ห้องอาหาร French Grill วันที่ 5-11 ตุลาคม 2560 ซึ่งจะแบ่งเป็น lunch และ dinner ซึ่งเมนูจะแตกต่างกันนิดหน่อย โดยในช่วง dinner จะเพิ่ม appetizer เข้ามาอีก 1 เมนู และ main อีก 1 เมนู (ในช่วง lunch ต้องเลือก main 1 จาก 2 อย่าง) บอกก่อนว่ามื้อนี้เราไม่ได้รับเชิญให้มารีวิว มาส่วนตัวแบบปกติ และได้ข่าวว่าเชฟค่อนข้าง strict เรื่องการถ่ายภาพ เลยคิดว่านั่งถ่ายแค่ในจานที่มาเสิร์ฟนี่แหละ แต่เชฟก็เห็นว่าเรามีกล้องมาและตั้งใจถ่ายรูป

เค้าเดินเข้ามาทักทายอย่างเป็นกันเองมากๆจนเราตกใจ ได้คุยกันและบอกไปว่าเรามี blog นะ เลยได้แลกนามบัตรกันและเค้าก็บอกว่าเดี๋ยวจะทำเมนูอื่นๆออกมาให้ชิมด้วย โชคดีไปเลยเรา เราเลือกมาตอนกลางวัน เพราะเย็นต้องบินกลับไทยแล้ว ห้องอาหารตกแต่งอย่างหรูหรา ตอนแรกเข้าไปก็เกร็งๆเหมือนกัน เพราะเราไม่ได้เตรียมตัวเอาชุดดีๆมาเลย ออกจะเป็นชุดลำลองไปเที่ยวในเมืองซะมากกว่า แต่พนักงานที่นี่ให้ความเป็นกันเองกับเราและบริการดีมาก ยิ่งเห็นว่าเรามาคนเดียวกลัวเหงาก็ชวนคุยกันใหญ่

Chef Bruno Ménard was at French Grill from 5-11 October 2017. There are lunch and dinner course to be chosen. For dinner, there will be an additional entrée and main. I do this review without any sponsorships. It’s my personal review of the service and dinning experience. I had to catch a flight back to Bangkok in that evening so lunch was a must-go.

The French Grill restaurant is well-decorated. It gives you a sense of glamour. Nevertheless, the staff demeanor made me feel really warm welcome. Chef Ménard was so generous. During lunching, he came to the table introducing all the food served. He even gave special treats by making 2 extra dishes to me. This made the whole experience unforgettable.

Well, after a long interim, let’s get to the food!

พนักงานเสิร์ฟคนสวยยกขนมปังอุ่นๆมาให้เรา พร้อมบอกว่าแนะนำให้กินทันที เพราะขนมปังที่นี่อบร้อนๆอร่อยมาก จะมี Garlic butter และ butter เสิร์ฟมาคู่กัน พอได้กินแล้วต้องบอกว่าอร่อยสมที่เค้าบอกไว้จริงๆ ทำให้เรานึกถึงขนมปังที่ห้องอาหาร New York Steakhouse ที่ JW Marriott Bangkok หรือว่านี่อาจจะเป็นสูตรเดียวกันก็ได้นะ

Warm bread with garlic butter and plain butter was first arrived on the table. Its taste reminded me of the one I had at New York Steakhouse in JW Marriott Bangkok. Both are yum.

และแล้วอาหารจานแรกก็มา เป็น starter คำเล็กๆ ชื่อว่า The King Crab เราพยายามกินให้หมดภายใน 1 คำเลยเพื่อให้ได้รสชาติทั้งหมด คำแรกก็ประทับใจเลยนะ ได้กลิ่นของปูที่ไม่คาวและส้ม yuzu ที่เข้ากันได้อย่างดี

After a lovely bread, three entrée, yes three!, came one after another. The first bite was king crab with yuzu. It was a very good kick off as the freshness of crab and aroma from the yuzu orange kind of washed my palate. Light and delicious!

The Beetroot and the scallop จริงๆจานนี้จะเสิร์ฟตอน dinner แต่เชฟทำมาให้เราลองชิมด้วย ส่วนประกอบหลักๆก็ตามชื่อเลยโดยจะมี Pink peppercorn vanilla และ sesame เสิร์ฟด้านข้าง ให้เราคลุก sesame ไปด้วยก่อนกิน scallop สดไม่เหนียว ได้ความหอมของผักต่างๆและ sesame

The next one was some sort of specialty to me as it normally serves during dinner. Beetroot and scallop came with pink peppercorn, vanilla and roasted sesame on the side. Scallops were divine, juicy and tender. The scents of spices lifted the dish to another level.

ระหว่างที่ลิ้มรสอาหารแต่ละจาน เชฟก็เดินมาคุยกับเราและอธิบายด้วยตัวเองเกือบทุกจานและถามตลอดว่าอาหารโอเคมั้ย มาถึงซุปบ้าง อันนี้เราชอบที่สุด The Butternut squash soup ตอนเสิร์ฟมาก็งงๆนะมาเป็น milk foam เลย ซึ่งเชฟบอกว่า มันคือ Coffee and green cardamom milk foam ซึ่งเค้าพยายามเอากาแฟมาผสมผสานกับซุปออกมาเป็นชามนี้และเป็นเมนูโปรดของเค้าเช่นกัน เราชิมฟองนมด้านบนก่อน หอมนุ่มมาก และตักให้ลึกลงไปจะเป็นซุปสีเหลืองๆ เค้าแนะนำว่าให้เรา mix กันแล้วค่อยกิน บอกได้เลยว่าอันนี้สุดยอดมาก ซุปหอมหวานมากๆจริง ตอนนี้ยังจำรสชาติที่ปลายลิ้นได้อยู่เลย

The butternut squash soup came next. This quirky dish was served in form of milk foam which made of coffee and green cardamom milk. He suggested to mix first and have a full sip of everything together. I still remember its taste clearly while writing this. Gosh! It was so yum.

มาถึง main course กันบ้าง สำหรับในมื้อกลางวัน เราต้องเลือกระหว่าง The cod และ The Wagyu tenderloin and the foie gras เราเลือกเป็น The cod ซึ่งวัตถุดิบหลักก็ตามชื่อเลยคือปลาคอดนั่นเอง

After fantastic entrée and soup, I was so ready for the main course. It came in two choices; cod and beef. I picked cod. This mouth-watering dish was 10 out of 10 to me, well couldn’t help pick up on the Masterchef LoL. The Chardonnay sauce went along very well with cod and squid. Mash potato is surprisingly blended in with every component.

หน้าตาหน้ากินมากๆ ปลาคอดชิ้นกำลังพอดีคำ 2 ชิ้น ด้านบนมีผักโรยมา คล้ายๆผักชีบ้านเรา หอมมาก เมื่อแยกชิ้นปลาออกมาด้านล่างก็พบกับ Ikura ของโปรด และ ขนมปังกรอบที่อร่อยมาก บริเวณฐานจะเป็น mashed potatoes ที่เนื้อเนียนมาก รอบๆจะเป็นซอส Chardonnay ที่มีส่วนผสมของไวน์ขาว แนะนำให้กินทั้งหมดพร้อมกัน อร่อยมิรู้ลืม ปลาและ ikura สดมาก เข้ากันได้ไม่มีที่ติ เรากินเกลี้ยงเลย

เชฟยังใจดีทำ main อีกจานมาให้เราชิมด้วย The Wagyu tenderloin and the foie gras เนื้อ wagyu ที่ย่างมาระดับ medium เสิร์ฟพร้อม foie gras ที่ sear มาอย่างพอดี คู่กับซอส 3 อย่าง สีส้ม คือ Carrot & Orange Blossom water puree กินแล้วจะรู้สึกสดชื่นๆดอกไม้มาเลย สีน้ำตาลคือ Cocoa ค่อนข้างเข้มข้น และสุดท้าย สีเหลืองคือ Mustard จานนี้ก็อร่อยเช่นกันสำหรับคนชอบเนื้อ และ ฟัวกราส์ ไม่ควรพลาด แต่ตัวเราเองไม่ค่อยชอบกินฟัวกราส์อยู่แล้วจึงอาจจะเฉยๆ แต่เนื้อทำมาค่อนข้างดี เหนียวไปนิดเดียวแค่บางคำเท่านั้น

In courtesy of Chef Ménard, I also got to have the wagyu tenderloin and foie gras as a special treat. There were three different sauces; the floral carrot, orange blossom, the intense cocoa and the spicy mustard. Each of the sauce gave me a different aspect to the dish as if it resembles each season to the dish: spring, summer, and autumn.

ตอนนี้ก็เริ่มอิ่มพอดี ได้เวลาของหวาน ระหว่างที่กินไป พนักงานเสิร์ฟมาคุยกับเราบ่อยมาก น่ารักสุดๆ จนได้รู้ว่าเค้าชื่อ Linh อายุเท่ากันเลย ภาษาอังกฤษของเค้าค่อนข้างดีมากเลย เค้าเลยเสิร์ฟชาร้อนเป็น complimentary ให้เรา

Thank you so much ! During the luncheon, I have received the loveliest service by Ms. Linh who was so friendly and warm welcome. I thank you for that Ms. Linh J. You have just made my whole experience in the restaurant even better.

The Marou chocolate and the griotte แค่ยกมาเสิร์ฟเห็นก็ร้องว้าวแล้ว ด้านล่างเป็นraspberry sorbet (ถ้าเราจำผิดก็ขออภัยนะ แต่รสชาตินี้เลย) มีบราวนี้หนึบๆและครีมหอมๆ กินแล้วสดชื่นมาก ส่วนตัวชอบกินของหวานสไตล์นี้อยู่แล้วเพราะรู้สึกเป็นการจบมื้ออาหารที่ให้ความรู้สึกสดชื่นมากๆ

Finally, the dessert was arrived to my table. The Marou chocolate and the griotte looked amazing! Under this, there was raspberry sorbet which gave a refreshing touch. It was a perfect landing of my 3-michelin star experience. I absolutely loved it!

สรุปเป็นมื้อที่ประทับใจมาก ดีใจที่ตัดสินใจมาลอง ไม่ผิดหวังจริงๆทั้งการบริการและความเป็นกันเองของที่นี่ แม้ว่าจะมาคนเดียว แต่ไม่รู้สึกเหงาและเกร็งเลย คราวหน้าถ้ามีโอกาสได้มาเราก็อยากมาลองเมนูอื่นๆของห้องอาหารนี้เหมือนกัน น่าจะอร่อยแน่นอน

At last, I felt like everything aligned perfectly for me to be able to ultimately enjoy the meal. The generosity of the chef, the lovely service of the staff, and, of course, great dishes that had brought to my table. I’ll definitely be there again soon
